For the current trends in mixology, we see a growth in artisanal and local spirits like gin, agave, tequila and mezcal. Additionally, fresh ingredients, fruits and herbs will dominate the creation of summer cocktails and drinks. At Playground, we use seasonal ingredients and therefore our drinks menu will reflect the season, the city is currently facing. Drinks at the playground are fashioned to look beautiful as more people are ‘tasting with their eyes’ and capturing everything they eat and drink.
The combinations for this summer include grapefruit, orange, Indonesian lemons, celery, herb tea as well as the usage of hibiscus and lavender. The idea behind summer cocktails is, they should balance sweet and sour flavours and provide a refreshing feeling at the same time. The scope for mixologists is growing in India as the need to accommodate the tastes of so many patrons pushes the boundary for creative thinking and unusual combinations — like the Playground signature of a cold brew Negroni which includes Vodka and cold brew coffee — an ideal summer drink!
Keeping in mind the rise in healthy living, most patrons now prefer their drinks to be sweetened with natural syrups and would tend to avoid drinks with any sort of artificial sweeteners. This also pushes the creativity of those behind the bar to create new combinations that satisfy the palate.
The cocktail combinations have been chosen keeping in mind the ideal pairings between the drinks and the food offered. For bold dishes with a strong flavour profile, I pair them with something light and refreshing which works well for the summer.
While creating and ideating new recipes, I don’t really associate drinking cocktails only to a certain gender or age group. As our guests today are well travelled and thoroughly updated with the current trends, we see more foodies across all ages and genders that are interested in the bar experience. Therefore, the recipes curated keep in mind both tastes of those who reside in Delhi as well as for all our guests who travel the world. A case in point would be two of our most popular cocktails- Spicy Pineapple Margarita and the Herb Tea Cooler. Both are sweet, sour and refreshing and cater to the tastebuds of a large audience, while they highlight the seasonal fruits and preferred tastes.
